Skilled fishmonger earns Scottish Salmon Co gold

The winners of the biennial ‘Golden Fish’ competition, sponsored by the Scottish Salmon Company, have been announced at a prestigious trade show in Lyon, France.

The competition, now in it is 20th year, was held at the Salon International de la Restauration, de l'Hôtellerie et de l'Alimentation (SIRHA) event and tasked six master fishmongers to compete for the title by preparing and presenting SSC’s Tartan Salmon Label Rouge, in addition to testing knowledge-based questions. 

The winner was Sonia Bichet, followed by Antoine Gerardin in second place and Gwenael Laville in third place. The competitors faced a panel of judges, who looked for an exceptionally high standard of work, SSC said in a press release.

SIRHA is a world-renowned hospitality and food service event, which takes place in Lyon every two years and showcases the best of the industry over five days with more than 3,000 international exhibitors. 

The crème de la crème

Frederic Chevallet, president of Lyon-Poissonnier-Ecailler society said: “We are delighted to be able to gather together and celebrate the crème de la crème of our industry’s talent and as always, it is much appreciated to have the support of the Scottish Salmon Company.

“Once again, our talented chefs displayed a high level of expertise, but there could be only one winner and the favoured dish was truly a work of art.”

SSC business development chief Su Cox said: “It’s important to recognise the craft of our fishmongers and I congratulate all of the competitors for being at the very top of their game.
