Fish is a staple part of the Japanese diet, and Scottish salmon tends to be served raw as sushi and sashimi.

Scott Landsburgh, chief executive of the Scottish Salmon Producers’ Organisation (SSPO), said: “Scottish salmon has a well-established international reputation for quality and provenance.

“As more and more international consumers look for healthy, high quality fish, Scottish salmon can easily satisfy these needs.

“Farmers are making the most of growing global demand for superior products and their efforts are reflected in these latest export returns.”
