Finnish companies partner to reduce food waste and create new protein source

Finnish food technology company Hailia Nordic has teamed up with fish supplier Kalavapriikki and retail giant S Group to launch a new product made from rainbow trout byproducts.

The "pulled rainbow trout" is hitting the shelves of over 500 grocery stores across Finland this month.

Using Hailia's patented technology, the companies explain they are transforming typically discarded parts of the fish, such as bones, heads, and fins, into new food product. 

The resulting texture resembles cooked fish fillet, making it a versatile ingredient for both home cooking and industrial food production, the companies explain in a press release. 

"We're excited to be part of this initiative," said Jari Korhonen, CEO of Kalavapriikki. 

"By utilizing these previously unused parts of the fish, we're not only reducing food waste but also creating a more sustainable and profitable seafood industry."

S Group, with its retail network, is playing a pivotal role in bringing this new product to consumers.
