Smokehouse bought by salmon farmer

The Scourie-based firm said it had bought Salar Smokehouse in South Uist, adding to existing operations in Sutherland and the Hebrides, the newspaper Aberdeen Press and Journal reportsSalar is best known for its flaky smoked salmon, which is cooked and smoked at the same time to a format devised by creators Eric and Jane Twelves in 1997. The Twelves are retiring from the business as a result of its acquisition by Loch Duart, which also took over two redundant sites in South Uist earlier this year.Loch Duart managing director Nick Joy told the newspaper: “A number of our directors have been addicts of Salar Flaky Smoked Salmon for some time, so when the opportunity came to acquire the company we were already very interested.“We have been supplying our salmon to Salar Smokehouse for this product for some time, so this is an extension of a relationship which is already strong.“To top it off, the smokehouse is conveniently situated on the quayside next to our Loch Carnan sea site,” he told the Press and Journal.The value of the deal was not disclosed.
